Today, I’d like to share one of our family’s all-time favorite dishes: pumpkin mash♪
It’s made with just three ingredients:
Pumpkin, coconut oil, and salt!
Even without any added sweetener, it turns into a surprisingly dessert-like treat that reminds me of pumpkin pie.
Pumpkin Mash Recipe
- About 1/4 pumpkin
- About 1½ tablespoons coconut oil
- Salt, to taste
It’s super easy to make.
Put the pumpkin in a pot and add enough water to cover about half of the pumpkin.
Bring it to a boil and cook until the pumpkin becomes tender and most of the water has evaporated.
If the pumpkin is still firm, add a little more water and continue cooking until it softens.
Using a wooden spatula, mash the pumpkin with the skin on.
Add the coconut oil and salt, then mix everything together.
That’s it… done!

The key is to cook the pumpkin until it’s really soft, and to get the salt level just right.
Adjust the amount of salt to your taste as you sample it.
Pumpkin is rich in vitamins A, B1, B2, C, and E, which are said to support energy recovery and immune function.
Eating pumpkin together with coconut oil may also help your body absorb fat-soluble vitamins.
Whenever I eat pumpkin mash, I feel wonderfully refreshed, perhaps thanks to pumpkin’s diuretic effect.
The next day, I tend to feel regular and comfortable, and my skin feels smooth, too.
